Arroz a la cubana-updated
So, when I was in spain, my host mom used to make me “Arroz a la cubana”. Essentially it was rice, tomato sauce and a fried egg. I used quinoa instead of rice and replaced the sauce with an updated version of my tomato vegetable soup(adding black eyed peas and worcestershire). We stuck with the fried egg. Make sure it is a little gooey for epic noms.
