Simple Polish Beet Salad

  1. Put in whole, washed beets in a pot filled with water. Bring the pot to a boil, then set to a simmer, letting the beets cook. Usually taken 45 min – an hour or so? Beets take a while. Stick a fork through them to see if they are soft enough.
  2. Drain this beautiful blood colored water and rinse the beets in cold water to cool them down.
  3. They will be hot! Watch out! Peel the beets. You can use a knife to cut the skin away or you can just peel it away. Beets will still be hot! Let them hang out for a while.
  4. Slice beets into whatever size you want.
  5. Add olive oil, balsamic vinegar, salt, pepper, and a tiny dash of sugar.
  6. Nom nom nom!

Many people do not enjoy beets and say that they taste like dirt. When I was 10 years old, I would have agreed with this, but as I aged and my palette matured I grew to love the beet. They are truly delicious and healthy vegetables, with an earthy and sweet flavor. Give them a try.

I like my beets hot, so I would recommend serving them warm, but my mom makes this recipe with cold beets (so I microwave them).

* These beets were from my parents’ garden!
